Forestry Pudding is something my mom used to make that I have recently had a big craving for. It is a sort of self-saucing spice pudding - a pudding in the old-style English sense. i suspect it was probably even originally made with suet ;p
I went looking for recipes online and found... absolutely nothing. Just a couple other people asking for recipes! Well I am trying to make it now - I say trying because I'm improvising on various things (I don't have a bunt pan, for example, though I hope to get one soon!), but I know this recipe to be sound when you aren't mucking all about with it. This uses my mother's biscuit mix recipe (included below), and I think you could use any other kind of biscuit base, like Bisquick, to the same effect. Thanks to my sister, who typed all this up a few years ago :)
My Mother’s Biscuit Mix
This is a very versatile mix that can be used s biscuits, or made into dumplings, forestry pudding, shortcake or even dumplings for stew. Make up the whole recipe to have mix on hand whenever you need it, or just make up enough for the item you are baking. Woo, math!
- 9 c. flour
- ¼ c. baking powder
- 1 Tbsp. salt
- 1 lb (2 1/3 c.) shortening
Mix dry ingredients, then cut in shortening until mixture resembles coarse meal. Store at room temperature in airtight container or plastic bag.
Forestry Pudding
- 4 c. mix
- ¾ c. milk
- ¼ c. molasses
- 2 tsp. cinnamon
- 1 tsp. each of cloves, ginger and nutmeg.
- ½ c. raisins or chopped dates.
- ¼ c. butter
- 1c. brown sugar, packed
- 3 c. boiling water
Preheat oven to 370 F. Warm molasses and mix with the milk. Stir spices into the mix, then add molasses mixture and mix. It should be sticky but stiff. Grease a 10” tube pan and place dried fruit in a layer on the bottom. Evenly spoon the dough on top. In another bowl, mix butter and brown sugar. Pour the boiling water over this mixture and stir. Very gently pour the hot mixture over the dough in the pan. Bake 20-25 minutes, or until a toothpick inserted into the centre comes out clean. The hot mixture will form a sauce with the dried fruit. Best served warm.
And an extra bonus:
Biscuits – Dumplings - Shortcake (because it felt silly not to include it ;)
- 2 c. mix
- ½ c. milk
Stir with a fork, then knead very gently about 20 times. Roll or pat 1/2 inch thick and cut into desired shape (a floured drinking glass is a good size). Bake 10-12 minutes at 400 F. For dumplings or drop biscuits, use a bit more milk, and steam in the stew you are cooking. For shortcake, add ¼ c white sugar before mixing in milk.
