It's been a long time since I've done one of these, I think
I have a bunch of small-ish garden tomatoes from
tethy123's husband's garden. I have some red lentils soaking.
I don't have an onion ;_;
I do have onion powder though, and coconut milk.
I am going to make....something with all of this, plus garlic and various Indian spices. Maybe also spinach?
I'm looking at a bunch of different recipes, as as is my usual MO I'll steal ideas and do something that is similar to a few but not quite exactly any of them. Mostly because they all call for onion >_<
So, wish me luck! If this all goes south on me, I do at least have leftover roasted cauliflower and chickpeas in the fridge :3
(Sometime later...)
Well that turned out.... all right. It's missing something - maybe more ginger? maybe.... a frickin' onion? >.> the concept is sound, but I also think I added too much water - what i have is more soupy than I'd envisioned, but still tasty enough. I really should have added some carrots or spinach or something though. Maybe I will later, once there is room in my pot.
I used to have a dutch oven. It mysteriously vanished, and I have guilty suspicions as to where. I could have used a stock pot, but that seemed like overkill :p
Anyway, the concept is sound but the execution could use some work! Next time :)
