Huzzah for crockpots!
I suppose this qualifies as a stew...
1 qt chicken broth (form the freezer)
1 can crushed tomatos (from the pantry)
1 onion (from a friend's garden!)
1 large summer squash, de-seeded, quartered, and chopped thinly (from a friend's garden!)
2 chicken breasts, chopped in small pieces (from the freezer)
Most of a bag of frozen spinach (from the freezer)
1 jar of French lentils (from pantry)
Spices (eyeballed - needs more salt): Salt, pepper, cumin, coriander
Tossed in the crock pot and left overnight. Pretty tasty, and it made a ton. I will probably freeze most of it for lunches, as though it is good, and pretty healthy, I suspect I will get sick of it pretty fast...
I should take the turkey out of the freezer and put it in the fridge to start thawing. Then I can bake that this weekend and never run out of meat again @_@
I also made peanut butter cookies filled with nutella last night. They were tasty, only I used the flourless cookie recipe, and were pretty crumbly. The nutella centers though worked very well as a proof of concept, and I may try it again with sturdier cookies. The trick is to pre-portion and freeze the nutella dollops before you form the cookie around them, and make sure they are completely contained. You may need to adjust baking time slightly if it makes your cookies bigger.
I also saw a recipe for 3-ingredient nutella brownies this morning - 1 cup nutella, 10 tbsb flour, and 2 eggs, bake @350 for about 30 min... I may try a reduced version of this, as I am running out of eggs >.>
