Today I made a delicious thing! So good! I made vanilla cupcakes, using a de-veganized version of the Vegan Cupcakes Take Over the Word vanilla recipe (I used real milk - shock!). The recipe I used is here. I used the oil version, with canola oil, and used a cup of milk with a tablespoon of white vinegar to curdle it - presumably you could just use straight-up buttermilk if you had some. I might have used my almond milk, but I didn't want an almond flavour for what was coming next!
I had some pineapple-jalapeƱos jam from
tethys123. It was already a thick jam, so I just spread a thin layer on top. If your jam is runnier, you can cook it down o make it more like a glaze.

Then I frosted them with cream cheese frosting. If you are at all a fan of spicy-sweet things, you should give this a try! If you want more of a peppery punch, you could aways hollow out the cupcakes and fill them with jam instead of just icing them. This jam has a pretty good kick to it already though, so I was happy with just the layer.
Now I have to try not to eat them all!
