Squash pie (makes two)

4 C mashed, cooked squash
3C milk
5 eggs, slightly beaten
1 1/3 C brown sugar
1/4 tsp salt
2 tsp ginger
1 tsp nutmeg
1tsp cinnamon (does anyone actually ever measure this stuff? :D)

-Cook squash and scoop out flesh. This is most easily accomplished by cutting it into sections on a plate, covering it with saran wrap and nuking it, probably in batches, until it is soft, and then scraping it out. Mash or run through the food processor until it is as smooth as possible.

-Mix dry ingredients in a large bowl

-Mix eggs, squash, and milk in blender

-add wet to dry, mix well

-Bake @450 for ten min, and then 325 for ~35 min, or until it passes the knife test. Err, be sure to use a raw pie shell, too, in case that's not obvious to someone o_O Let it cool before you refrigerate it.

I would like to add that you can use a food processor (obviously), or even a mixer to blend the squash. You have to do it a bit at a time in the latter case, though. If you were really hardcore you could probably beat it with a spoon... I mean, they did make pie in the olden days, after all!
