Andra's Pirate Stew
In your favorite heavy bottom saucepan melt a couple of tablespoons of butter over medium heat. Add a tablespoon or two (or three, you know what you like) of the following and mix into the melting butter:
garlic powder
cayenne pepper
fresh ground black pepper
dry mustard (Coleman's if you've got it)
3 or 4 dried bay leaves
Throw in 4 slices of bacon, diced and stir while the bacon starts to cook and render it's fatty goodness. Throw in two sweet onions, roughly chopped.
Cook until they are fragrant start to soften slightly. Now pour in a cup of really good dark rum (or sherry or a mixture of both). Cook and stir until the strong alcohol smell has cooked away. Now add two cups of your favorite fish or chicken or vegetable stock. Bring to boil, lower heat, cover and simmer for 15 minutes.
Throw in a couple of pounds your favorite fish (fresh or frozen). I use frozen tilapia and cod straight from the freezer. Bring to boil again, lower heat,
cover and simmer until the fish is cooked through. Stir, breaking up the fish into bite sized chunks. Add a cup or so of heavy cream or half and half and stir over low heat until heated through and throw in a few good sized handfuls of fresh Italian parsley. If you want to use salmon, add fresh dill instead of parsley. If you're not low carbing, you can add some flour or cornstarch mixed in some cold water to thicken the dish. Ye be warned! This dish is addictive.
