I was up at 10:30 this morning, and went to the market. I suceeded in spending less than 15$ by not buying anything for other people. I bought: a double chicken kebab-thingy(5$), a refill of apple cider(2.50$), two German pastries - a butterfly and a delfterstick(3.35$), and a black velvet truffle (1.50).
I came home and had a shower, and then did three loads of dishes (there have been a lot of people at our house lately... 15 of us were here on Wednesday!) while Jodie tidied in the living room and the kitchen. The I baked lemon squares and vaccumed the downstairs. Awesome!
These squares are easy and very delicious. Apart from that, they are made form things which are often already found in the house, so you don'tneed to make a special trip to the store, unlike any of the other squares and treats I thought about making earlier.
This recipie will fill 1 8"x8" pan, but is easily doubled to fill a 9"x13"
Preheat oven to 350.
Bottom:
1C flour
1/4 C icing sugar
1/2 C butter or maragarine (softened).
Crumble together and press into bottom of pan. Bake for 10-12 minutes.
Top:
2 eggs
3/4 C sugar
Beat until smooth and slightly thick.
Add:
3 Tbsp lemon juice or the juice of 1 lemon
Lemon rind (if available, not 100% necessry)
2 Tbsp flour
1/4 tsp baking powder.
Blend until moistened, pour over bottom layer. Bake 20-25 min (it shouldn't be too liquidy in the center, or too brown around the edges. Just shake the pan a little, and if it doesn't jiggle too much, it is done). Sprinkle with icing sugar. cool, and eat.
Now I am doing nothing much at all while everyone else plays video games! hurrah! Tonight I will go and see a play, and then come home and play with Terry and Rob, I hope. arr!
