I boiled my duck and used all the stock and all the meat, adding a little water, and carrot, onion and the clementines from the cavity. It was delicious but I'd leave the clementine peel out next time (while still including the flesh) as it overpowered the other flavours very slightly.. the effect was cumulative over the course of a bowlful.
