I've been thinking about these for ages, since Sas and I were talking about chocolate and peanut butter cookies. Peanut butter sandwich cookies! Chocolate cookies with peanut butter icing = yum! I wish I had a camera! I even put a peanut on all the 'top' cookies :D

No, my friend, it is *better* than that! It is *two* chocolate cookies, with peanut butter icing between them :D I used the cookie recipe from my hershey's cookbok for vanilla creme sandwich cookies, only I concocted some pb icing instead. And one peanut pressed into the top of each sandwich :)

Bake cookies first, then assemble. My other option was to find a realy good crispy chocolate cookie recipe (maybe a good chocolate shortbread?), and make some sort of pb filling, and make filled sandwich cookies that are baked together. You know the ones where the top cookie has a cut out and the centre is filled with Jam? (Jammy Dodgers as they are called in their British appelation ;). I couldn't find a cookie recipe that I thought would work well, alas :/
