measured_words, and another story as well. I have some other things I'll put up. I'm hoping that this will encourage me to finish more things, and I hope it doesn't become too much of a thesis time-kill ;)
I also made cupcakes! Just short of a dozen, I will frost them tomorrow and bring them (or.. some of them ;) to class. Hooray!
Adapted from the Deep dark Chocolate Cake in the Hershey's book
Stir in bowl:
2 C sugar
1 3/4 C flour
3/4 C cocoa
1 1/2 tsp baking powder
1 1/2 tsp baking soda
1 tsp salt (optional)
Add:
2 eggs
1 C milk
1/2 C vegetable oil
2 tsp vanilla extract (or some other kind of flavouring)
Mix with electric mixer for about two min, if you've got one. I don't see why these couldn't be easily hand mixed.
add and mix in (carefully):
1 C boiling water
This will give you a runny batter, but that is what you want, so don't panic. Pour this into your cupcake tins (or cake pans). These should be lightly greased in advance, and I highly advocate using muffin papers for cupcakes. It is about 1/3 C of batter... fill they quite full, then bake at 375 for about 15-20 min, or until a knife or toothpick comes out clean.
Frosting is tomorrow's project ;)
